Hello! Any Cooks Out There...


This blog is going to be a little unique today.

I need recipes. Now I know that I can get them off the Internet. I can wrangle my family to give me exact measurements for the traditional recipes. But I thought that you - out there - could help me.

My son has to turn in 40 recipes by the end of January. This is part of his Home Ec project. He also has to make a few of the dishes and turn in to the teacher for extra credit. Let me just say that this is her favorite project because she doesn't have to bring her lunch.

My daughter had the same project last year and we've used up the family and friends as sources. Since I didn't want to duplicate the same results, I'd like to have fresh new recipes.

He has to have a variety from categories, such as: appetizers, soups, entrees, desserts, even drinks (sorry, no alcohol).

Interesting project. Glad to see boys in Home Ec. Here is a recipe that Connie Brockway published on the now defunct Squawk Radio blog a few years ago. I have never made it,,,but it sound terrific and easy!

CONNIE BROCKWAY’S ‘THE THINGS’

1 package caramels (Kraft preferred)
1/2 c. + 2 tbsp. butter
1 can sweetened condensed milk
1 c. brown sugar
1/2 tsp. salt
1 1/4 c. flour
1 1/2 c. oatmeal
1/2 tsp baking soda
1 tsp vanilla
1 egg, beaten
1 c. semi sweet chocolate chips
1 c. cashew pieces

Preheat oven to 350.

Mix the brown sugar, the salt, the flour, the oatmeal, and the baking soda.

Mix in the egg, the vanilla, and the 1/2 c. butter (melted.)

Reserve 3/4 c. of the oatmeal mixture. Pat the rest into a 9 x 13pan and bake until light brown, about ten minutes.

Meanwhile, melt the caramels with the sweetened condensed milk and the remaining two tbsp. of butter. A double boiler works fine, but a microwave is easier. Big glass bowl, on high, stirring every minute or so until melted.

Pour the melted caramel mixture over the crust. Sprinkled the chips and cashews over the caramel, and crumble the remaining oatmeal mixture over all. Bake another 10 minutes. Don't over bake or the caramel will get hard.

How about something really simple like making a jello dessert?

Buy one box of Lime Jello, Strawberry Jello
1 tub of cool whip
Strawberries, cleaned
Mint leaves, if desired

Prepare one box of jello to specified directions.
Pour either green or red jello on bottom of clear dessert glass. Let set until firm. Depending how big glasses are determines how many glasses you will need. Prepare next box of jello and then pour on top of previous layer. Let set until firm. Add thin layer of cool whip. Add some strawberries to top. Garnish with a mint leaf if desired. It is a very pretty dessert! Delicious too!

Thanks for the Jello tip. I've done something similar and put it in a graham crust shell. Thanks for reminding me.
